1 lb. (450 gms.) baby okra, stems cut and slit lengthwise
1 Tbsp. vegetable or corn oil
1 tsp. mustard seeds (optional)
˝ tsp. fenugreek seeds (optional)
2 tsp. Spice 'N Flavor Kaalun (kadi) Masala |
1 tsp. salt (or to taste)
3 dry red chillies (seeds removed) broken into 2 pieces (optional)
1 Tbsp. curry leaves (optional)
3 cups plain yogurt (beaten well)

In a medium pan or pot boil 1 cup of water, add okra, cover and simmer for 5 to 7 mins. or until the okra is tender. (Instead of boiling, you may either steam or fry them)
In a medium pan (non-stick is ideal) heat oil over moderate fire and place mustard and fenugreek seeds, cover and sauté until popping sound stops, about 2 mins.
Add Spice 'N Flavor Kaalun Masala, salt, red chillies, curry leaves and sauté stirring 1 min. Add the boiled (steamed or fried) okra with remaining water (stock), yogurt and stir well for 2 mins. over very low fire to prevent the yogurt from separating.
Immediately transfer to a serving dish . Taste for salt and keep covered. |
